Things you need
1. A Mac
2. Non Jailbroken iPhone / iPad (Or rather even if you jailbreaked is still fine, just that it will be removed.
3. iOS developer account with valid certificate / $$ at a UDID account site
Step 1 - backup all your data into iTunes. Remember to transfer your app purchases
Step 2 - Download and install the latest iTunes 6.3 from the iOS Dev Centre under iOS 6 SDK Beta
Step 3 - Download and copy out the iOS 6 beta firmware according to your device from the same page
Step 4 - Obtain your UDID code from iTunes (Connect your device, click once on Serial No to change it to display the UDID instead
Step 5 - Link up your device in the iOS Provisioning Portal here. If no iOS developer account, move on to step 5.5. Else go on to 6
Step 5.5 - Go on to a UDID activation website like iOSUDIDs to activate your device. (Will require time and money. How much time depending on how much you pay)
Step 6 - Launch iTunes, hold on to option and click restore from backup
Step 7 - Select the iOS6 firmware file which you copied out
Step 8 - Finally, restore from your previous backup.
And with that, you should have a nice job done to go back to your previous state with, but updated with iOS 6.
I messed up in a few places for myself. Basically i didn't notice there was an iTunes update (Though should have been obvious, stupid me) and did the job using 6.1. Fiddled very long at this stage since I basically restored quite a few times before I realized what happened.
Following that also didn't really know how to link up my device so also wasted time here since wasn't very sure.
Following that couldn't restore using iTunes 6.3 since it refused to show the restore function, while my device kept showing "This device is not registered in the iOS developer program" Tried using Xcode which also did not work. Finally remembered to use DFU mode and my iTunes finally let me restore from backup.
Lastly, forgot to transfer my own purchases, so stuck having to redownload stuff on my iPad, zzzz.
Ah well, Siri, download my apps please!
